This week I have an event every night of the week ... this would normally have me delay starting. But thats not reality ... we have social events, soccer games and date nights. I have to be able to fold this into normal life and not just being in a bubble. I am also using this detox to work on other areas in my life that I have let go recently. First sleep, it is and has been a major issue for me ever since having John. That pregnancy messed up my hormones, cortisol levels and adrenal glands. So my plan is to be in bed at 10 pm and then lights out at 10:30 pm ... giving me 30 minutes to read Women Food God. Reading is my second area that I have not made time for.
Day One ...
Sausage, Spinach and Onion Egg Bake
12 eggs, beaten
1/3 c. coconut milk, unsweetened
1 10oz frozen chopped spinah, thawed and squeezed
1 bag of frozen seasoning blend (onions and peppers)
1lb. sausage (no sugar), browned and drained
salt and pepper
1 t. oregano
1 t. garlic powder
Tuna Salad in Pure Wrap
5 cans tuna, packed in water
1 onion minced
4 stalks of celery minced
2 green apples diced
1 cup sliced toasted almonds
Meatloaf Recipe
2 lbs of ground beef
4 eggs, beaten
3 T coconut amino
1 onion, minced
3/4 c. almond meal
(Spices: salt, pepper, garlic powder, oregano, dill, paprika ... )
Bake 375 ... on parchment cover sheet. Make into two loaves.

Coco Monkey Smoothie
1 c. unswt vanilla almond milk
1 frozen green tipped banana
1 T. almond butter
1 T. coconut oil
1 c. ice
pinch of salt
* optional handful of fresh spinach or kale

This looks great! I am totally going to try that meatloaf recipe - looks delicious!
ReplyDeleteMeatloaf was yummy ... I skipped the bacon this time and upped the meatloaf to 2 lbs. I baked it at 375 for 50 minutes ... in two logs shaped on parchment paper. I also added extra carrots to the kale.
DeleteI resonate with so much of what you said and are experiencing, regarding food, sleep, reading, and the pace of life. I resolved yesterday to change my sleeping schedule and then did the very same thing. But it is never too late to start again. I will be praying for you this week. With God's help and the grace of Jesus Christ, we can take care of ourselves And others. Bless you!
